Scottish Shortbread
Lots of variations to this recipe exist. Some are round cookies, some
spiced, but this one is a really rich recipie cooked in a round sponge
sandwich cake tin.
8oz white flour
6oz butter
5 oz sugar
2 oz ground almonds
Place ingredients into a mixing bowl and just rub the butter in Place
mixture in 2 sponge sandwich tins and just work it into the edge with
knuckles until combined and smooth. Prick with a fork
Cook at 325 F for 20 minutes or when golden brown and bubbling. Leave
to cool then mark out portions before completely cold.
