4-Cheese Mexican Tortilla Appetizers
Ingredients:
6 (6 inch) fajita-size flour tortillas
1 16 oz.can ORTEGA? Refried Beans
1/2 cup ORTEGA? Medium Taco Sauce
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup sliced (about 3) green onions
1/4 teaspoon crushed red pepper
2 cups (8 ounces) 4 cheese Mexican blend
Directions:
PREHEAT oven to 400? F. Place tortillas on baking sheet(s).BAKE for 3
to 4 minutes or until crisp.SPREAD refried beans evenly on tortillas.
Spread 1 tablespoon taco sauce over beans. Top with bell peppers, green
onions and crushed red pepper. Sprinkle with cheese.
BAKE for 7 to 8 minutes or until cheese is melted. Cut into wedges.
St. Louis Bread Company Appetizer Roll Ups
12 slices Saint Louis Bread slices (suggestions: tomato-basil, sourdough,
or French loaves), sliced thin
8 ounces cream cheese softened
4 ounces blue cheese, crumbled
3 tablespoons minced green onion or
1 tablespoon chopped fresh chives
1/3 cup melted butter or margarine
Optional: Before rolling bread, add a thin layer of shaved ham.
Mix together the cream cheese, blue cheese, green onion or chives. Trim
crusts from bread. Roll each bread slice with a rolling pin to flatten.
Spread one side of each piece of bread with 2 tablespoons cream cheese
mixture. Roll up tightly. Brush with the melted butter. At this point
you may freeze unbaked rollups 3-4 weeks in an airtight container. Thaw
in refrigerator before baking. Bake rollups at 400 degrees F for 10 to
12 minutes.
Serves 12.
Glazed Ham Balls
Ingredients:
1 beaten egg
3/4 cup soft bread crumbs (1 slice)
1/3 cup dried tart red cherries or dried cranberries, finely snipped
1/4 cup finely chopped green onions
1/4 teaspoon pepper
1/2 pound lean ground cooked ham
1/2 pound lean ground beef
2/3 cup red currant jelly
2 tablespoons prepared mustard
Green onion slivers
Directions:
1. Combine egg, bread crumbs, cherries or cranberries, chopped green onions,
and pepper in a mixing bowl. Add ground ham and ground beef; mix well.
Shape into 1-inch balls.
2. Place in a 15x10x1-inch baking pan. Bake in a 350 degree F oven for
15 to 18 minutes or until done. Drain, if necessary.
3. Meanwhile, heat jelly and mustard together in a chafing dish, blazer
pan, or small skillet, stirring occasionally until jelly is melted. Add
ham balls to chafing dish. (Or, transfer ham balls to a warm heatproof
serving bowl and pour glaze over ham balls.) Keep warm. Garnish with green
onion slivers. Makes 48 meatballs (48 appetizer servings).

With Smoked Salmon
POTATO PANCAKES VONNAS WITH SMOKED SALMON
Yield: 1 Servings
3 lg Idaho Potatoes, peeled and -diced
2 tb Corn starch
2 Whole eggs
4 Egg whites
1/4 c Heavy cream
-Salt and pepper to taste
1 tb Lemon juice
1/4 c Creme fraiche or sour -cream
6 lg Slices of smoked salmon
1 4- ounce jar of osetra -caviar (optional)
-dill sprigs for garnish
Cook three large, peeled and diced potatoes in salted water When cooked,
pass potatoes through a food mill or sieve with fine holes. Place puree
in electric mixer with a paddle attachment. Add corn starch to mix thoroughly.
Slowly incorporate eggs and egg whites, then heavy cream. Season with
salt and pepper to taste. Meanwhile, in a small bowl, stir the lemon juice
into the creme fraiche. Set aside. Preheat non-stick skillet over medium
heat. Spoon the pancake mixture into skillet, keeping a round shape (s
ilver dollar size). Cook for 90 seconds, then turn and cook until done.
Place pancakes on plate and serve with one slice of smoked salmon, one
tablespoon of the
reserved creme fraiche mixture and a heaping teaspoon of caviar. Garnish
with dill and serve.
(Makes 6 appetizer servings)
Chinese-Style Spareribs
ingredients for 12 servings:
1/2 c Butter or Margarine
1 ea Med. Clove Garlic *
1 ea Env. Soup Mix **
16 oz (1 Can) Tomato Puree
1/2 c Brown Sugar
1/4 c White Vinegar
1/4 c Chili Sauce
5 lb Spareribs ****
Preparation:
* Garlic Clove should be finely chopped. ** You can use the following
soup mixes in this recipe: Onion, Onion- *** For best Taste use the Imported
Soy sauce. Domestic can be used but **** Country style spareribs can be
used, but baby back ribs are the best.

----- Preheat oven to 375 degrees F. In large saucepan, melt butter and
cook garlic with onion recipe soup mix over medium heat until garlic is
golden. Stir in tomato puree, sugar, soy sauce, vinegar and chil sauce.
Bring to a boil, then simmer, stirring occasionally, 15 minutes. Meanwhile,in
large aluminium foil-lined baking pan or broiler rack, arrange spareribs,
meaty side up, and bake 20 minutes. Brush spareribs generously with sauce,
then continue baking, meaty
side up, brushing occasionally with remaining sauce, 50 minutes, or untl
spareribs are done. Makes about 12 Appetizer or 7 main dish servings.
